Nutrition is vital to keep our seniors' bodies and minds healthy. Sunshine Gardens and the Country Home employ a nutritionist whose job is to ensure each meal is healthy and balanced for our residents. Every food group is accounted for and our kitchen staff takes great care in ensuring a quality dining experience with each meal.
Meal time is one of the most important events many of our seniors look forward to each day. We make it priority at Sunshine Gardens to nurture both the body and spirit with delicious food, and to provide an inviting ambiance.
CHEF JODY GOODWIN
Jody has a passion for cooking. He loves spending his days crafting delicious meals and considers it an art. "I enjoy utilizing fresh ingredients and preparing healthy food that tastes great." Much of the year, Jody is able to utilize some fresh produce and herbs from the local growers, as well as, food from Sunshine Garden's own community garden.
Jody graduated from the Le Crodeon Bleu Culinary College in 2001. He is a trained, certified chef and has worked in the industry over the past sixteen years, including two years as lead chef at the Sky Ute Casino in neighboring Ignacio, Colorado.
Jody continues to reside in Durango where he has been a local for over 26 years. Jody is married to Kaylie Goodwin and together they have son Kayden and step-children Kendrick, Kourtney, Emily, and Lily. Although Jody has a large family, he feels that Sunshine Gardens is an extended-family. "Cooking for the residents is instant gratification. It is like cooking for my family."
Chef Jody's Favorite Recipe
My Grandma's Fried Chicken
Serves 6
2ea whole cut up chicken
1 gal of milk
½ C. salt
3C. flour
2 tbl paprika
1tbl pepper
1tbl salt
1tbl onion powder
6C. vegetable oil
1. In large bowl combine chicken, milk, and salt and let sit overnight. This will help draw the blood out of the meat and also tenderize
2. Remove from milk brine and place on sheet pan
3. Sprinkle with seasonings on both sides of chicken
4. Pre-Heat oil to 35 degrees
5. Dredge in flour until evenly coated on all sides
6. Place in hot oil and cook for 15 minutes on each side until internal temp is 165 degrees
